So you say Hello and they reply with Hi.

That sounds like the natural start to a conversation to me...

Or if you mean they have started putting things after the Hi, well they are probably trying to continue the conversation

So you're in the middle of a conversation, and the other person will say something you don't understand, and that annoys you?

Well it could still be that they're making a joke that doesn't work as well if you don't know what type of humour they like. Or there are some users who have English as a second language, and may accidentally say something wrong.

The easiest solution, rather than getting annoyed that they said something you don't understand is to do what I have been doing here, and asking them questions etc until you understand what they were trying to say.

i guess everyone is different though, sometimes they say things out of the blue that arent even related to what i said. i just dont get them is all.

That isn't your fault. The vast majority of members on this site are under the false impression that being "random" is actually funny. They also have a hard time maintaining focus on one particular subject, which results in the rapid generation of short conversations.

Don't feel bad. It's just something you'll have to get used to.
